Hi Deborah.

Fab - sweet potatotes have a lower GI, so it would be good for the South Beach diet. I'm not following any regime in particular at the mo', just trying to cut back on the rubbish - but oh God it's so hard when all I can think about is cake!

Hey Deb.

I would never have paired up sweet pototoes and black beans either, but it works brilliantly. And you can't go wrong with a bit of cumin and coriander!

Moosewood also have a very similar-looking recipe called 'Tunisian Turnovers' - sweet potatoes in filo, with cumin, coriander, caraway and cayenne. Will have to try that out soon :-)

Black beans were on our dinner menu in a soup tonight. So now I have a new way to serve those wonderful beans. I love sweet potoates and never connected the two! Plus your other ingredients, like cumin, coriander, etc. are some of our favorites. This would be a great lunch item. Off to the grocery store in the morning!
